New Professor of Bioactive Food Proteins

Esben Skipper Sørensen has been appointed professor of bioactive food proteins at the Department of Molecular Biology and Genetics at Aarhus University, Denmark. The appointment is effective as of 1 January 2018

Esben Skipper Sørensen's research group works with basic research and application-oriented research in bioactive milk proteins. His research deals with the description of milk proteins in both breast milk and cow's milk, as well as studies of their biological activities.

The research group has long-term collaboration with the dairy industry on the use of bioactive milk proteins. This collaboration has led to patents on the production and use of bioactive milk proteins in, among other things, toothpaste and infant formulas, where the proteins are shown to have a positive effect on the immune system in infants.

In addition, Esben Skipper Sørensen is interested in popular science dissemination of nutrition research and themes, and he is a frequent lecturer at “Folkeuniversitetet” (Danish university extention), as well as at companies and other educational institutions.

Esben Skipper Sørensen has been working on milk protein research since his specialization in 1993. After completing his PhD in molecular biology at Aarhus University in 1995, he has been employed by what is currently called the Department of Molecular Biology and Genetics in Aarhus as research assistant (1995-1999) and associate professor (2000-2017). Since 2011, he has served as Section Coordinator for Molecular Nutrition at the Department of Molecular Biology and Genetics, Aarhus University.
