Henriette Kristina Søster Frislev: Usability of cytotoxic protein-fat complexes

During her PhD studies, Henriette Frislev has investigated a family of complexes, composed of protein and fatty acid from milk. The hypothesis was that these complexes were a potential candidate for cancer therapy. However, Henriette Frislev observed a lack of stability in environments simulating the circulatory system and unfortunately a lack of cancer cell selective. This is caused by the nonselective delivery of the cytotoxic fatty acid component to the cell membrane.

By replacing the fatty acid component, complexes with significantly reduced cytotoxicity can be formed. These complexes were shown to have the potential as 1) a delivery and encapsulation system to fortify food with vitamin D to protect against vitamin D deficiency and 2) a delivery system of cholesterol to cells, in order to study the effect of high cholesterol level. Improvement of the stability of protein-fatty acid complexes is needed in the future to make these complexes more useful.
