Jannik Nedergaard Pedersen: Milk proteins to prevent vitamin D deficiency

Vitamin D deficiency is a common problem worldwide and can have serious consequences if not addressed. During his PhD studies, Jannik Nedergaard Pedersen investigated how different proteins from milk could be used to improve availability of vitamin D in food. Using protein and fatty acid, new ways of improving the stability of vitamin D were investigated.

The new research findings contribute to the understanding of how protein can be used to improve the availability of vitamins in food. Furthermore, the structure and molecular properties of the different mixtures were characterized to understand in what other applications they may be used.

The PhD degree was completed at the Interdisciplinary Nanoscience Center (iNANO), Science and Technology, Aarhus University.
